The Course in Detail

A career as a Production Chef is challenging but rewarding, involving working as part of a team in a busy kitchen.

Production Chefs typically produce high volumes of food in time-bound environments, such as schools, hospitals, the Armed Forces, care homes, high street casual dining or pub kitchens. They apply highly skilled in methodical organisation, energy, accuracy, and attention to detail.

Through this Apprenticeship, you will train to deliver high quality meals while maintaining accuracy, reliability, and meeting time targets. You will also be mindful of the importance of sustainability and protecting the environment during food production and disposal.

This apprenticeship standard covers the core skills, knowledge and behaviours to demonstrate competency of a Production Chef and covers key requirements to include:

  • Techniques for the preparation, assembly, cooking, regeneration and presentation of food
  • Procedures for the safe handling and use of tools and equipment
  • Food safety and legislation
  • Key nutrient groups, their function and main food sources
  • Adapting and producing dishes to meet special dietary, religious and allergenic requirements

You will develop your skills, knowledge and behaviours through on and off-the-job training and are expected to attend College for pre-arranged masterclasses.

Entry Requirements & Progression

What You'll Need

You will need to have relevant employment, and entry is subject to interview and assessment.

GCSE English and maths grade 4/C or above (or Level 2 functional skills) are preferred.

This Could Lead to

On successful completion of this apprenticeship, you may have the opportunity to progress to the Level 3 Senior Production Chef Apprenticeship.

 

Assessment

Your progress will be continuously monitored and supported by a Professional Trainer.

Depending on the standard, we assess your competence through various methods, such as practical exams, assignments, interviews, project work, presentations or observations and we will also evaluate your portfolio of evidence, which documents your learning and progress throughout your apprenticeship with us.

The apprenticeship end-point assessment is the final evaluation stage of your apprenticeship programme. It's designed to determine whether you have achieved the knowledge, skills, and behaviours required to meet the apprenticeship standard and perform the job role independently.

Successful completion of the end-point assessment is required to receive certification.
