The Course in Detail

*This is a progression only course. There is no direct entry without first completing Level 2 Professional Catering or a similar qualification.

 

This course is perfect for you if you are looking at working in the hospitality industry as a chef.

T Levels are two-year, Level 3 study programmes that have been developed in collaboration with employers and businesses and are equivalent to three A Levels.

 

You will get a mix of hands-on practical training in workshops, classroom theory learning, and a minimum 45-day industry placement with an employer to give you real experience of the workplace. They also provide excellent progression into industry, apprenticeships as well as university.

 

You will cover key foundation modules including

  • Culinary quality
  • Kitchen operations
  • Health, safety and security
  • Nutritional analysis
  • Food safety practices and procedures
  • Team working
  • Business, including risk assessment, waste management principles and supply chain management

In addition to the core content, you will also complete one module of Professional Cookery. This course will enable you to develop understanding and advanced skills to work with the following different food groups:

  • Meat, poultry and game, including associated products
  • Fish and shellfish dishes and products
  • Vegetables, vegan and vegetarian dishes, including vegetarian protein sources and specific dietary considerations and needs
  • Dough and batter products, including fermented dough and batter products
  • Paste and patisserie products

  • Hot, cold and frozen desserts
  • Biscuits, cakes and sponges

What You'll Need

You will need a relevant Level 2 qualification (merit or distinction grade) including GCSE English and maths grades 4-9

This Could Lead to

Once completed you can progress to a range of university-level courses, this can include HNC/HND qualifications within the college group or courses at university.

You can also progress into skilled employment or into a higher-level apprenticeship.
